Bourbon Biscuits recipe - How to make Bourbon Biscuits

Preparation Time:    Baking Time:  25 minutes   Baking Temperature:  180°C (360°F)   Cooking Time:    Total Time:     20Makes 20 biscuits

Ingredients

1/4 cup soft butter
1/4 cup powdered sugar
3/4 cup plain flour (maida)
2 tbsp cocoa powder
1/2 tsp vanilla essence
1/2 tsp baking powder
3 tbsp milk
plain flour (maida) for dusting and rolling
sugar for sprinkling
chocolate butter icing

Method
    Method
  1. Combine the butter and sugar in a deep bowl and mix very well using a spoon till smooth.
  2. Add the plain flour, cocoa powder, vanilla essence and baking powder, mix well and knead into a dough using approx. 3 tbsp of milk.
  3. Dust a clean dry surface with little plain flour, place the dough over it and roll into a 225mm. X 175mm. (11” x 9”) rectangle.
  4. Sprinkle little sugar evenly over it, and again roll it lightly.
  5. Cut the rolled dough into 20 equal rectangle portions.
  6. Place it on a baking tray and bake it in a n pre-heated oven at 180°c (360°f) for 20 minutes. Allow it to cool completely.
  7. Once cooled, apply the chocolate butter icing evenly over 10 biscuits and sandwich it with the remaining 10 biscuits.
  8. Store in an air-tight container and use as required.
