Method- To the beaten eggs add the onions, green chilli, salt and coriander. Mix well.
- Heat oil in a broad non-stick pan, add the grated potatoes and spread it gently using a flat ladle to form a circle.
- Sprinkle a little salt over it, cover it with a lid and cook on a medium flame till the potatoes are cooked and golden brown.
- Pour the egg mixture evenly over the potatoes and let it cook, flip the omelette and cook on the other side.
- Serve immediately.
