Green Moong Dal and Palak Handvo

A delicacy from the heartland of Gujarat, Handvo is a unique dish baked in a Kadhai over a traditional tempering and sautéed veggies. Here, we have used a batter of green moong dal which gives a homely flavour and enticing mouth-feel. Ingredients like spinach, onions, coriander and others add to the flavour, while a tempering of sesame really uplifts the aroma. Take care while turning over the handvo, as it must be done slowly without breaking it. Together with peppy green chutney, the Green Moong Dal and Palak Handvo makes an amazing Evening Tea Snacks It can also be served along with a full meal, as a starter.

Ingredients

1 cup green moong dal (split green gram) , soaked for 3 hours and drained
2 1/4 cups finely chopped spinach (palak)
2 tbsp curds (dahi)
1/4 tsp soda bi-carb
2 tbsp chopped coriander (dhania)
2 tsp green chilli paste
1/2 tbsp lemon juice
1/2 tsp asafoetida (hing)
2 tbsp oil
salt to taste
1 tsp mustard seeds ( rai / sarson)
1/2 cup finely chopped onions
1 tsp sesame seeds (til)

Method
    Method
  1. Put the green moong dal in a mixer and blend in a mixer to a coarse mixture, without using any water.
  2. Transfer the mixture into a deep bowl, add the spinach, curd, soda bi-card, coriander, green chilli paste, lemon juice, ¼ tsp asafoetida and salt and mix well. Keep aside.
  3. For the tempering, heat the oil in a non-stick kadhai and add the mustard seeds.
  4. When the seeds crackle, add the onions, sesame seeds and the remaining ¼ tsp of asafoetida and sauté on a medium flame for 1 minute.
  5. Pour the green moong dal mixture over it and spread it evenly with a back of a spoon.
  6. Cover it with a lid and cook on a medium flame for 10 to 12 minutes or till the base turns golden brown in colour and crisp.
  7. Lift the handvo gently using 2 large flat spoons and turn it over to the other side.
  8. Cover and cook on a medium flame for another 10 minutes or till it turns golden brown in colour.
  9. Cool slightly and cut into equal pieces.
  10. Serve hot with green chutney.

Ma''am what would be the procedure if one wanted to bake this instead of making in the kadai?

   Hi Priya, We have not tried baking it but, you can try. Simply pour the batter into a greased baking tray and bake in a pre-heated oven at 200ºC(400ºF) for 30 to 35 minutes or till the crust is golden brown in colour.

I have tried it and it turned out awesome but I want to know that can we ferment the mixture in stead of adding soda and after fermentation is it necessary to add dahi

   There is no need to ferment this recipe. Kindly follow the recipe as it is.

I made this. But it turned soggy from inside. I followed all the instructions. Is there anything I did wrong?

   Hi Dimple, Try and cook the handvo on a little lower flame for a little longer.

green moong dal handvo.. with palak added to it.. i loved it.. for me it was a meal with some green chutney and chaas. woow.. crispy from out and soft and moist from inside.. perfectly spiced.. i make this very often.. now..
