Ingredients

1 cup thickly sliced unpeeled cucumber (approx. 20 slices)
1 small red capsicum
1/4 tsp oil for greasing
1 cup cooked chick peas
2 tsp crushed garlic (lehsun)
freshly ground black peppercorns (kalimirch) to taste
1 tbsp olive oil
1 tbsp thyme
1 1/2 tsp lemon juice
salt to taste

For The Garnish
a few sprigs of parsley

    Method
  1. Apply ¼ tsp of oil evenly over the red capsicum. Pierce it with a fork and roast it over an open medium flame till it turns black in colour from all the sides.
  2. Immerse it in water and remove the skin, stem and seeds and cut into thin strips. Keep aside for the garnish.
  3. Combine all the ingredients, except the cucumber slices and blend in a mixer to a smooth mixture using little water till smooth.
  4. Arrange the cucumber slices on a flat dry surface and top each cucumber slice with little topping mixture.
  5. Serve immediately garnished with red capsicum strips and parsley sprigs.

  1. For the herbed cucumber, we will first roast the bell pepper for garnishing. To begin making that, apply ¼ tsp of oil evenly over the red capsicum.
  2. Pierce it with a fork so that it cooks evenly
  3. Place the capsicum on an open flame and roast it on a medium flame
  4. Roast till it turns black in colour from all sides. You can even roast the bell pepper in an oven by placing them on a greased baking tray. Roast them for 20 minutes at 200’C, rotate and roast them for another 20 minutes

Another alternative is to place the bell pepper in a food grade plastic bag or place the roasted peppers on a cutting board, then invert a large bowl over the top of them. The bag/bowl traps the steam inside that will help in peeling them easily.

  7. Place it on a chopping board and remove the stem and seeds. Discard it.
  8. Cut the roasted bell pepper into thin strips. Keep aside for the garnish.

  1. To make the Lebanaese hummus, wash the kabuli chana very well
  2. Submerge 1/2 cups of dried chickpeas in enough water
  3. Cover them with a lid and soak them overnight
  4. After soaking, the chickpeas will look like this
  5. Drain them and remove excess water
  6. Put the soaked and drained chickpeas in a pressure cooker
  7. Add enough water
  8. Pressure cook for 4 whistles or until the chickpeas are soft
  9. Allow the steam to escape before opening the lid. This is called the natural release method and is done by removing the pressure cooker from the hot burner and let the pressure drop by cooling down naturally.
  10. Drain if required and in a mixer jar, take the cooked chickpeas
  11. Add crushed garlic. If you are Jain, then avoid adding garlic
  12. Add freshly ground black peppercorns
  13. Add olive oil. Use best quality olive oil for maximum flavour
  14. Add thyme for an added flavour
  15. Add lemon juice
  16. Add salt to taste
  17. Add a little water that will help in grinding. The authentic recipe makes use of curd and tahini hence, it does not require water. You can make use of low-fat curd if you like
