  1. In a deep bowl put 1 cup grated red pumpkin (bhopla / kaddu).
  2. Add 1/2 cup chopped spinach (palak).
  3. Add 1 cup whole wheat flour (gehun ka atta).
  4. Add 1 tsp chilli powder.
  5. Add 1/4 tsp turmeric powder (haldi).
  6. Add salt to taste.
  7. Add very little water to make a soft dough. We added 1 1/2 tablesppons water. Note that the pumpkin releases water so hence less water is added.
  8. Knead into a soft dough.
  9. Make dough into rope shape. 
  10. Divide dough into 8 equal parts.

  1. Dust some whole wheat flour on a rolling board.
  2. Flatten paratha and pust some flour over it.
  3. Roll out a portion of the dough into a 125 mm. (5") diameter circle using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle). Don't add oil at this stage.
  5. Please the rolled roti on the hot tava.
  6. Let is cook for 30 seconds.
  7. Brush the uncooked top part of the roti with a little oil. 
  8. Flip over.
  9. Brush the cooked part with oil.
  10. Cook both sides of the kaddu roti | kaddu paratha | kaddu palak ki roti |  healthy pumpkin roti | till done.
  11. Serve kaddu roti | kaddu paratha | kaddu palak ki roti |  healthy pumpkin roti | hot with some curds.

Kaddu is not liked by anyone at home.But when used in this paratha with palak it tastes just awesome.I made this again at home today and it was a real hit. Thanks to the team for the great recipes.

Kaddu palak ki roti.. i do not like kaddu as a vegetable.. but when added in the dough, it was so tasty.. and could not make out the vegetable inside.. it was extremely soft and moist..
