Method for healthy mishti doi-
To make healthy mishti doi, in a deep bowl take khajur.

Pour enough hot water in the same bowl.

Cover with a lid and keep aside for 30 minutes.

After 30 minutes, drain and deseed khajur.

Transfer the deseedeed khajur to a small blender jar.

Add 1/4 cup water and blend until smooth.

Further. heat milk in a deep non-stick pan and mix well and boil on a medium flame for 8 to 10 minutes, while stirring occasionally. Cool slightly for approx. 10 minutes, while stirring occasionally.

Add dates puree.

Whisk very well using a whisk.

In a deep bowl, take curds and whisk it.

Pour the milk dates mixture in the same bowl.

Whisk very well.

Pour the mixture into 5 individual cups or bowls, cover with a lid and keep aside in a warm place for atleast 8 to 10 hours or till set.

Refrigerate the khajur mishti doi for atleast 1 hour and serve chilled garnished with saffron strands.
