To make Mexican dosa, make the stuffing first. For that combine baked beans, spring onions, capsicum, chilli powder, tomato ketchup, red chilli sauce, cumin powder and salt and keep aside. Then, heat a non-stick tava (griddle), sprinkle a little water on it and wipe off using a piece of cloth. Pour a ladleful of the batter (approx. ¼ cup) on the tava (griddle) and spread in a circular motion to make a 150 mm. (6”) diameter circle. Spread 1 tsp of butter over it and cook on a medium flame till it turns slightly crisp and golden brown in colour. Place one portion of the stuffing in a row in the center and sprinkle 2 tbsp of cheese evenly over it. And fold it over from both the sides overlapping each other. Serve the mexican dosa immediately.

To Be Mixed Into A Stuffing For Mexican Dosa
1 cup readymade baked beans
1/4 cup finely chopped spring onions whites and greens
1/4 cup finely chopped capsicum
1 tsp chilli powder
1 tbsp tomato ketchup
1 tbsp red chilli sauce
1/2 tsp cumin seeds (jeera) powder
salt to taste

1 1/2 cups dosa batter
6 tsp butter for cooking
12 tbsp grated processed cheese

  1. To make the mexican dosa, divide the stuffing into 6 equal portions. Keep aside.
  2. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth.

    • To get crispier dosas, you can add some rice flour to the batter and mix well.
    • The dosa batter should be at room temperature always. So if you have stored the batter in the refrigerator, remove it and keep outside at least half an hour before making the dosas.
