Ingredients


For Mint and Masoor Tikki
1/2 cup finely chopped mint leaves (phudina) leaves
1/2 cup masoor (whole red lentil)
4 tbsp grated low fat paneer (cottage cheese)
4 tbsp whole wheat bread crumbs
salt to taste
2 tsp finely chopped green chillies
2 tsp oil for greasing and cooking
1/4 cup green chutney

Method

  1. To make mint and masoor tikki, clean, wash and soak the masoor in enough water overnight. Next day drain well.
  2. Combine the masoor with 2 cups of water and pressure cook for 2 whistles or till the masoor is soft and slightly overcooked, but not mashed.
  3. Allow the steam to escape before opening the lid.
  4. Drain the masoor and discard any excess water.
  5. Combine the cooked masoor with all the remaining ingredients in a deep bowl and mix well.
  6. Divide the mixture into 12 equal portions and shape each portion into a 50 mm. (2”) diameter round and flatten them in between your palms.
  7. Heat a non-stick tava (griddle) and cook each tikki over a slow flame, using a little oil for cooking till it turns golden brown in colour from both the sides.
  8. Serve the mint masoor tikki hot with green chutney.

Tips
  1. Use the discarded masoor dal water to make chapati dough, as it is rich in plenty of nutrients.

  3. Add 4 tbsp grated low- fat paneer.
  4. Add 4 tbsp whole wheat bread crumbs. These help in binding the tikki.
  5. Add 2 tsp finely chopped green chillies.
  6. Add salt to taste. We added 1/4 tsp salt.
  7. Mix well using your hands.

  3. Heat a non-stick tava (griddle) and grease it with oil.
  4. Place the 6 tikkis carefully over it. 
  5. Cook the bottom of the tikki for 30 to 45 seconds on low flame.
  6. Grease the top of the tikki.
  7. Flip over.
