1/2 cup moong (whole green gram) , soaked and drained
2 tsp ghee
1/2 cup chopped paneer (cottage cheese)
salt to taste
freshly ground black pepper (kalimirch) to taste
1 tsp lemon juice

Method

  1. To make moong soup with paneer, combine the moong and 6 cups of water in a pressure cook and pressure cook for 3 to 4 whistles.
  2. Allow the steam to escape before opening the lid.
  3. Blend the cooked moong using a hand blender to a smooth mixture. Strain it using a strainer and keep aside.
  4. Heat the ghee in a deep non-stick pan and add the paneer cubes, salt and pepper powder to taste.
  5. Add the moong mixture and mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  6. Swtich off the flame and add 1 tsp lemon juice and mix well.
  7. Serve the moong soup with paneer hot.
