Ingredients

2 to 3 cups plain flour (maida)
1 small raw papaya , peeled and grated
2 to 3 green chillies , finely chopped
1 tsp cumin seeds (jeera)
2 tsp coriander (dhania) leaves
1 tsp chilli powder
1 tsp dried mango powder (amchur)
1 tsp garam masala
salt to taste
oil for cooking

    Method
  1. Add enough water to plain flour and knead into a soft dough.
  2. Cover and keep aside for 30 minutes.
  3. Divide the dough into 4 equal portions and keep aside.
  4. In another bowl, squeeze out the excess water from papaya and add the remaining ingredients and mix well.
  5. Divide the stuffing into 4 equal portions and keep aside.
  6. Roll out a portion of the dough into a circle of 4” diameter.
  7. Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
  8. Roll out again into a circle of 6” diameter, using little whole wheat flour.
  9. Heat a tava and cook each paratha, using little oil, till golden brown spots appear on both the sides.
  10. Repeat the same steps to make 3 more parathas.
  11. Serve hot.
