Scones with Whipped Cream and Jam

Ingredients

1 3/4 cups plain flour (maida)
1 tsp baking powder
salt for taste
1/2 cup cold butter cubes
4 tbsp castor sugar
3/4 cup curds (dahi)
1 tbsp milk
1 tsp vanilla essence
plain flour (maida) for dusting
1 tbsp milk for brushing

For Serving
beaten whipped cream

    Method
  1. Combine the plain flour, baking powder, salt and butter in a deep bowl, mix well and rub in between your palms to form a breadcrumbs like mixture, add the sugar and mix well. Keep aside.
  2. Combine the curds, milk and vanilla essence in a microwave safe bowl, mix well and microwave on high for 1 minute. Add in the plain flour mixture and knead into a very soft dough without using any water. Keep it aside for 10 minutes.
  3. Take spoonfuls of the dough and place them on a greased baking tray at equal distance.
  4. Brush each portion on top with milk.
  5. Bake them in a pre-heated oven at 200°c (400°f) for 30 minutes.
  6. Cool slightly and serve warm with beaten whipped cream and jam.

Lovely english scones, i used to have them when i was in London for my 1 year Diploma, i used to miss them for my breakfast... I baked them and refreshed my memories... they taste so yummy with cream and jam....A perfect breakfast...
