Spicy Potato and Roti Roll recipe with step by step photos

Often our kitchen is stocked with leftover food from lunch or dinner, especially when you have guests for a feast. For the rotis-
To prepare roti for spicy potato roll, in a deep bowl take plain flour. Maida makes the roti more pliable and helps in keeping them soft for a longer period of time.

Add whole wheat flour.

Add ghee. Ghee can be swapped with oil.

Add salt to taste.

Combine all the ingredients in a deep bowl and gradually add water to form a dough.

Knead it into a soft dough using 1/2 cup water.

Cover the dough with a lid and keep aside for 15 minutes.

Divide the dough into 9 equal portions.

Roll a portion of the dough into a 150 mm. (6”) diameter circle using a little plain flour for rolling. You can roll them big or small depending on how big you want the spicy potato rolls.

To cook the roti, heat a non-stick tava (griddle) and place the roti.

Apply a little oil. Do not apply too much oil or else the roti will turn crispy and break while rolling.

Cook the roti till golden brown spots appear on both the sides. If not preparing spicy potato rolls immediately, partially cook the roti just like the roadside Frankie seller does and just before assembling, cook the roti completely and then prepare the roll.

For the potato rolls-

Add boiled and mashed green peas.

Add grated processed cheese.

Add cornflour. This helps in binding together all the ingredients and prevent the potato roll from breaking while frying.

Add finely chopped green chillies for some spice. If preparing for kids, add chilli powder or green chilli paste to not get that spicy bite from chillies.

Add garam masala.

Add lemon juice for a tangy flavour.

Add salt to taste.

Combine all the ingredients in a deep bowl, mix well and keep aside.

Divide the mixture into 9 equal portions. Shape each roll into a cylindrical shape and roll them in cornflour before frying.

To cook the potato rolls, heat the oil in a deep non-stick pan and carefully drop a few rolls at a time.

Fry on a medium flame till they turn golden brown in colour from all the sides. Health conscious people can pan-fry or shallow fry the potato and peas roll.

Drain on an absorbent paper and keep aside.

Similarly, deep-fry all the potato and green pea rolls. Keep aside.
To Be Mixed Into Masala Water -
In a small bowl, take 2 tsp dried mango powder. Chaat masala, vinegar or lemon juice can be used as a substitute.

Add 1 tsp chilli powder.

Add ½ tsp garam masala.

Add salt and ¼ cup of water.

Mix well and our masala water is ready. Keep aside.
To Be Mixed Into An Onion Masala Mixture-
To prepare masala onion mixture, take ¾ cup finely chopped onions in a bowl. If you are Jain, then make use of cabbage or any other veggies like carrot, beetroot etc.

Add 1 tsp chilli powder.

Add 1 tsp dried mango powder.

Add salt to taste.

Mix well. This onion masala mixture is a crunchy element of spicy potato rolls.
How to make spicy potato rolls-
To assemble the spicy potato roll, place a roti on a clean, dry surface.

Spread ½ tbsp of the masala water evenly over it.

Put ½ tbsp of the prepared onion masala mixture evenly over it.

Place the fried potato roll over it.
