To Be Mixed Into A Dry Fruit Stuffing
1/4 cup chopped raisins (kismis)
1/4 cup chopped cashewnuts (kaju)

For The Tikkis
1 1/2 cups crumbled fresh paneer (cottage cheese)
1/4 cup finely chopped coriander (dhania)
1 tbsp finely chopped green chillies
salt to taste
a pinch of powdered sugar
cornflour for rolling
oil for cooking

For Serving
tomato ketchup
green chutney

  1. Place the paneer in a dish, knead it very well, till it is smooth like a dough.
  2. Add the coriander, green chillies, salt and powdered sugar and mix well.
  3. Divide the mixture into 10 equal portions and shape each portion into a small round.
  4. Press a little in the centre of each round to make a depression, place 1½ tsp of the dry fruit stuffing in it and again shape them into a round ball and then flatten it lightly between your palms. Roll it lightly in cornflour.
  5. Repeat step 4 to make 9 more tikkis.
  6. Heat the oil in a non-stick tava (griddle) and cook a few tikkis at a time till they are golden brown in colour from both the sides.
  7. Serve hot with tomato ketchup or green chutney.

This starter recipe is great...the combination of paneer, green chillies and coriander is amazing...It is a quick fix to serve during a party. I served it with green chutney and all relished it...
