Ingredients

1 recipe eggless vanilla sponge cake (7”)

Other Ingredients
2 tbsp sugar
1 tsp lemon juice
1 cup beaten whipped cream
2 cups vanilla ice-cream

For The Garnish
1/4 cup chopped mixed dry fruits (almonds , pistachios and cashewnuts)
a few cherries

Method
    Method
  1. Combine the sugar, lemon juice and 5 tbsp of hot water in a bowl and mix well. Keep aside.
  2. Cut the sponge cake into two parts horizontally.
  3. Pour the prepared sugar mixture, evenly over each halve.
  4. Spread the ice-cream on one halve and spread it evenly using a palate knife.
  5. Cover it with the other halve of the cake.
  6. Put it in the freezer and freeze for 4 to 5 hours or till set.
  7. Put the whipped cream in the piping bag and make swirls on top at equal distances. Place one cherry on each swirl.
  8. Sprinkle the mixed nuts on the sides of the sponge and press lightly to stick.
  9. Cut into equal wedges and serve immediately.

A superb dessert recipe.. with an ice-cream layer in the center.. all my guest enjoyed this dessert.. as they got pastry and ice-cream for dessert.. Thank you for this recipe..
