Ingredients


2 tbsp oil
3/4 cup chopped mixed vegetables
1/4 grated sweet corn cob
4 cups clear vegetable stock
1 tsp soy sauce
1/2 tsp sugar
salt and to taste
2 tbsp cornflour mixed with 3/4 cup water
3/4 cup boiled noodles , cut into 50 mm. (2") length
chillies in vinegar and chilli sauce to serve

For The Garnish
2 tbsp finely chopped spring onions
1 tbsp finely chopped coriander (dhania)

Method
    Main procedure
  1. Heat the oil in a wok over a high flame, add the mixed vegetables and stir-fry for 1 minute.
  2. Add the corn, vegetable stock, soya sauce, sugar salt and pepper and bring to boil.
  3. Lower the flame, add the cornflour mixture and stir continuously till the soup thickens.
  4. Add the noodles and mix well.
  5. Garnish with spring onions and coriander and serve hot with chillies in vinegar and chilli sauce.
