Method- Bring the stock to boil in a deep pan and add the lemon grass, ginger, lemon zest and chillies, mix well and cover and simmer for 15 minutes.
- Add the tofu, carrots and salt, mix well and boil again for 7-8 minutes until carrot is cooked.
- Remove from the flame, add the lemon juice, salt and coriander, mix well.
- Just before serving, discard the lemon grass and ginger.
- Serve hot.
