Ingredients


To Be Blended Into A Smooth Yellow Curry Paste (using 5 Tbsp Of Water)
1 tbsp roasted cumin seeds (jeera)
1 tbsp roasted coriander (dhania) seeds
1/4 cup chopped lemon grass (hare chai ki patti)
1/2 tbsp grated ginger (adrak)
3 whole dry kashmiri red chillies , broken into pieces
1 tsp chopped garlic (lehsun)
1/4 cup onion cubes
1/2 tsp turmeric powder (haldi)
salt to taste

Other Ingredients
1 large pineapple
3 cups cooked basmati rice
2 tbsp butter
3/4 cup chopped onions
1 tsp finely chopped green chillies
1/2 cup coconut milk
2 tbsp raisins (kismis)
2 tbsp roasted cashewnuts (kaju)
1/2 tbsp sugar
salt to taste

For The Garnish
2 tbsp finely chopped coriander (dhania)

    Method
  1. Cut the pineapple into half lengthwise, keeping the leaves on. Scoop out the pineapple from the center portion using a sharp knife.
  2. Chop the scooped pineapple into cubes you will get approx. 1½ cups of chopped pineapple. Keep aside.
  3. Heat the butter in a deep non-stick kadhai, add the onions and green chillies and sauté on a medium flame for 2 minutes.
  4. Add the prepared yellow curry paste, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Add the chopped pineapple, coconut milk, raisins, cashewnuts, cooked rice, sugar and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  6. Divide the rice into 2 equal portions and fill each portion of the rice into the scooped out pineapple halve.
  7. Serve immediately garnished with coriander.

It appears to be more in taste like Indian pulao, rather than a Thai dish. Appears to be an Indianised version of some Thai dish.

Pineapple and rice is an amazing combination.. The thai yellow paste with lemon grass gives an amazing authentic taste to the rice... Something different from the regular rice dishes you have.. I loved it and m gonna soon make it again!
