Bread Upma is one of the peppiest ways to have bread! Although it is a great way to use up leftover bread, many people like it so much that they would go and buy a fresh pack of bread just to make this upma. Indeed, with desi shades of chillies, onions, tomatoes and spice powders, tempered traditionally, and perked up with tomato ketchup and lemon juice, this snack is replete with varied flavours that are sure to delight your palate. You will also thoroughly enjoy the unique texture of this upma, which can be had as a breakfast or evening snack.

Ingredients

3 cups roughly torn bread pieces
2 tbsp oil
2 tsp mustard seeds ( rai / sarson)
6 to 7 curry leaves (kadi patta)
1 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/2 cup finely chopped onions
1 cup finely chopped tomatoes
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
1 1/2 tbsp tomato ketchup
2 tsp lemon juice
salt to taste
2 tbsp finely chopped coriander (dhania)

Method
    Method
  1. Heat the oil in a broad non-stick pan and add the mustard seeds.
  2. When the seeds crackle add the curry leaves, ginger, garlic, green chilies and onion and sauté on a medium flame for 1 to 2 minutes.
  3. Add the tomatoes, turmeric powder, chilli powder, 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while mashing lightly with the help of a ladle.
  4. Add the tomato ketchup, lemon juice and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  5. Add the bread, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  6. Switch off the flame, add the coriander and mix well.
  7. Serve hot.

Method for Bread Upma

  1. For making the quick and easy Bread Upma, we have taken 6 breads which would yield us 3 cups of roughly torn bread pieces. 
  2. Roughly tear the pieces of bread as shown in the image. 
  3. For preparring bread upma, heat the oil in a broad non-stick pan.
  4. Once the oil is hot, add mustard seeds. 
  5. When the seeds crackle add the curry leaves.
  6. Add ginger. Alternatevily you can also use Ginger green chilli paste. 
  7. Add garlic. Garlic gives a luscious taste to the Bread Upma.
  8. Add green chillies. You can adjust the quantity according to your preference of spice and if making for kids avoid adding chillies. 
  9. Add onions. You can also use spring onion white if you wish to. 
  10. Sauté on a medium flame for 1 to 2 minutes.
  11. Further add tomatoes. Tomatoes would add tanginess to the Bread Upma
  12. Add turmeric powder. 
  13. Add red chilli powder. You can adjust the quantity according to your palate. Add 2 tbsp of water,  mix well and cook on a medium flame for 2 to 3 minutes, while mashing lightly with the help of a ladle.
  14. Add tomato ketchup. 
  15. Further, add lemon juice. 
  16. Mix well and cook on a medium flame for 1 minute, while stirring continuously and then add salt to taste. 
  17. Add the bread.
  18. Mix well and cook the Bread Upma on a medium flame for 1 minute, while stirring continuously.
  19. Switch off the flame, add the coriander and mix Bread Upma well.
  20. Serve Bread Upma hot.

Upma using left over bread is something which isthe best solution to use up stale bread. its quick. Love the typical flavours of mustard and curry leaves and the masalas.. I take it in my tiffin as well or make an instant snack for evevnings.
