The procedure of making coriander upma is divided into 2 steps. The first is making the coriander chutney and second is tempering. To make the chutney, blend coriander, green chili, sugar, cumin seeds, lemon juice into a smooth paste and keep aside. Further for the tempering, in a non-stick pan, add oil. You can even use ghee if you wish to, it will enhance the taste. Next, add urad dal and mustard seeds. Here, we have only added urad dal but you can add chana dal too , as it is used in the traditional upma recipe. Both together would give coriander upma a nice nutty flavor. Next, add asafeotida, curry leaves and onions. Once onions are cooked add the roasted semolina and the prepared chutney. Cook everything together. Add hot water and stir continuously making sure the coriander upma is not sticking to the bottom of the pan or burning.

You can garnish the colorful and vibrant coriander upma with grated coconut and coriander if you wish to. To make quick coriander upma recipe healthier, by add a lot of boiled vegetables like carrots, beans, tomatoes and peas along with the semolina when cooking. This will add more fibre to sooji coriander upma making it a lot healthier. Serve rava coriander upma hot in an inverted cup shape, as suggested.

Ingredients


For Coriander Upma
1 cup semolina (rava / sooji)
2 tbsp oil
1 tsp urad dal (split black lentils)
1 tsp mustard seeds ( rai / sarson)
a pinch of asafoetida (hing)
4 to 5 curry leaves (kadi patta)
1/4 cup finely chopped onions
salt to taste
1 tsp sugar
2 tbsp finely chopped coriander (dhania)

To Be Blended Into A Coriander Chutney (using Little Water)
1/2 cup roughly chopped coriander (dhania)
3 green chillies , roughly chopped
1 tsp sugar
1 tsp cumin seeds (jeera)
1 tsp lemon juice
salt to taste

Method

  1. To make coriander upma, dry roast the semolina in a broad non-stick kadhai on a medium flame for 3 to 4 minutes or till it turns light brown in colour, stirring continuously. Keep aside.
  2. Heat the oil in a broad non-stick pan and add the urad dal and mustard seeds.
  3. When the seeds crackle, add the asafoetida, curry leaves and onions and sauté on a medium flame for 1 minute.
  4. Add the roasted semolina and salt and sauté on a medium flame for 1 more minute.
  5. Add the coriander chutney and cook on a medium flame for 1 minute.
  6. Add 2½ cups of hot water and cook on a medium flame for 1 to 2 minutes or till the water evaporates, while stirring continuously.
  7. Add the sugar and coriander, mix well and cook on a medium flame for 1 to 2 minute.

  1. To make the coriander upma recipe | quick kothambir upma | rava coriander upma | lets make the coriander chutney first. Take the coriander in a blender. Make sure the coriander you are using is fresh as it is the main ingredient inthe recipe. Wash it well under running water. 
  2. Add green chillies. you can increase or reduce the spice level as per your prefrence.
  3. Add sugar and salt to taste. 
  4. Add cumin seeds to add on flavour to the chutney.
  5. Blend all the ingredients into a smooth paste. Add 3 tbsp water during blending if required. 
  6. Now, lets make the Coriander upma. Take semolina in a broad non stick pan and dry roast on a medium flame for 3-4 minutes
  7. After roasting it looks like this. Make sure you get nice golden brown color. Do not brown the rava or the Coriander upma will taste bitter. Set the roasted Semolina aside. 
  8. Heat oil in a broad non stick pan.
  9. Add urad dal. Let it brown a little or else it will give a raw taste.
  10. Add the mustard seeds. Let them crackle.
  11. Add asafoetida. Asafoetida is always used in Indian cooking as it aids digestion.
  12. Add curry leaves. Coriander upma originates from the southern part of India where curry leaves are used in abundance. 
  13. Add onions and saute on a medium flame for 1 minute. 
  14. Add roasted semolina and salt to taste. And saute for a minute on medium flame.
  15. Add coriander chutney and cook for a minute more. 
  16. Add 2 1/2 cups hot water and cook the Coriander upma on a medium flame for 1-2 minutes or until the water evaporates while stirring continuously.
  17. Add sugar and coriander to the coriander upma | quick kothambir upma | rava coriander upma | and mix well. Cook for a minute more. 
  18. Serve coriander upma | quick kothambir upma | rava coriander upma | hot along with Filter coffee.
