Ingredients


For The Spinach Layer
1 1/2 cups chopped spinach (palak)
1 tbsp oil
1/4 cup finely chopped onions
1/2 tsp finely chopped green chillies
1/4 cup finely chopped fenugreek (methi)
salt to taste

For The Paneer Potato Pancakes
1/2 cup grated paneer (cottage cheese)
3/4 cup boiled , peeled and grated potatoes
salt to taste
2 tsp finely chopped green chillies
1 tbsp finely chopped coriander (dhania)
1 tbsp plain flour (maida)

Other Ingredients
oil for greasing and cooking
5 tbsp pizza sauce
5 tsp grated paneer (cottage cheese)

Method
For the spinach layer

    For the spinach layer
  1. Heat the oil in a non-stick tava (griddle), add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the green chillies and sauté on a medium flame for a few more seconds.
  3. Add the spinach, fenugreek leaves and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Divide the mixture into 5 equal portions and keep aside.

  1. Combine all the ingredients in a bowl / plate and mix well.
  2. Divide the mixture into 5 equal portions and shape each portion, in between your palms, into 50 mm. (2”) diameter thin flat round pancake. Keep aside.

How to proceed

  1. Heat a non-stick tava (griddle) and grease it lightly using oil.
  2. Cook the pancakes on it, using a little oil, till they turn golden brown in colour from both the sides.
  3. Spread 1 portion of the spinach layer over each paneer pancake.
  4. Top it with 1 tbsp of pizza sauce and 1 tsp of paneer and cook on a medium flame for 1 to 2 minutes.
  5. Serve immediately.

Paneer tikki base topped with spinach and fenugreek stuffing, and tangy pizza sauce with fresh paneer. The combination is really very yumm.. Once start to eat to cant stop..
