Being a frozen dairy dessert, kulfi is technically an ice-cream, but with the rich flavour and unique texture of condensed milk, it is a class apart, a genre in its own right!

Of the many varieties of kulfi, this traditional Malai Kulfi stands out with an extra rich and intense flavour and creaminess, all thanks to the slow but rewarding process of condensing full-fat milk till it gets an irresistible texture and aroma.

A sprinkling of cardamom accentuates the appeal of this dessert.

Malai Kulfi recipe - How to make Malai Kulfi

Ingredients

4 cups full fat milk
3/4 cup condensed milk
1 tbsp cornflour
2 tbsp milk
1/4 tsp cardamom (elaichi) powder

Method
    Method
  1. Combine the cornflour with the milk and mix well. Keep aside.
  2. Heat the milk and condensed milk in a deep non-stick pan and bring it to a boil on a medium flame, while stirring occasionally, so that the milk does not stick to the bottom of the pan. It should take approximately 9 to 10 minutes.
  3. Simmer the milk on a low flame for 40 minutes while stirring occasionally.
  4. Add the cornflour mixture and cardamom powder, mix well and cook on a slow flame, while stirring occasionally for 12 minutes or till it becomes thick.
  5. Switch off the flame and let it cool completely. Pour the mixture into 6 aluminum kulfi moulds.
  6. Freeze overnight or till set.

I tried this recipe today with a little variation. I had leftover rabdi around 1/2 cup and 1/4cup of milkmaid. So I had to add 4 tsp.of sugar for sweetness. And I also added 1/2 tbsp.if rice powder to the cornflour mixture and it turned out super delicious. Thankyou for the wonderful recipe.

Luvd it. I added crushed pista along with cardamom powder and dint add milk powder. It came out really wel. I m unable to post pics else I wud hv done it. Thanx fr the quick recipie. My son luvs it

Thanks a lot for such a wonderful recipe my son and my husband loves kulfi I made it yesterday evening v all had it today at 10 in the morning it came very nice .my son just hugged me and kissed me tight for the kulfi and my husband told that I will not have kulfi outside I will have it only if u make it.I am so happy Thanks again.

Mam , We cant use cow''s milk accept full fat milk?

   Hi Anchal, We suggest you use only full fat milk as for kulfi we need creaminess and that will not come good with cow''s milk.
