This delectable dish will go down well with people of all ages, as it has a broad mix of ingredients with something that will appeal to everybody. Assorted veggies, finely chopped, are sautéed with a tempering of jeera and mixed with cheese to make a mouth-watering stuffing for these parathas. A mix of plain and whole wheat flours is used to make this sumptuous paratha as these proportions keep the dough elastic enough to house an elaborate stuffing. For The Dough
1 cup plain flour (maida)
1 cup whole wheat flour (gehun ka atta)
1 tbsp ghee
salt to taste

To Be Ground Into A Smooth Paste
2 tbsp roughly chopped green chillies
1/4 cup chopped coriander (dhania)
1 tsp chopped ginger (adrak)
3 tbsp water

For The Stuffing
2 tbsp ghee
1 tsp cumin seeds (jeera)
2 cups finely chopped carrots
1 cup finely chopped cauliflower
1 cup finely chopped potatoes
1 cup green peas
2 tsp finely chopped green chillies
salt to taste
1/2 cup grated processed cheese
2 tbsp chopped coriander (dhania)

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
ghee for cooking

  1. Combine all the ingredients in a bowl, mix well and knead into a semi-soft dough using enough water.
  2. Cover with a lid and keep aside for 15 minutes.

  1. Heat the ghee in a broad non-stick pan, add the cumin seeds and sauté on a medium flame for a few seconds.
  2. Add the chopped vegetables, green peas, prepared paste and salt, mix well and cook on a medium flame for 7 minutes, while stirring occasionally.
  3. Switch off the flame, and mash the vegetables coarsely using a potato masher.
  4. Add the cheese, coriander and mix well. Keep aside to cool completely.

  1. Divide the stuffing into 7 equal portions and keep aside.
  2. Divide the dough into 14 equal portions.
  3. Roll out 2 portions of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
  4. Place a rolled circle on a clean, dry surface, spread one portion of the stuffing evenly over it. Cover it with another rolled circle and press it gently to seal the edges.
  5. Heat a non-stick tava (griddle) and cook the paratha, using a little ghee , till it turns golden brown in colour from both the sides.
  6. Repeat steps 3 to 5 to make 6 more parathas.
  7. Serve immediately.

Parathas with vegetables and cheese, was a great hit among my kids, as they loved the cheesy taste of the parathas, at the same time eating healthy vegetables.

Nice filling of carrots, cauliflower , potatoes and green peas. I skipped the cheese and love the paratha.
