We have also added maida to the mixture which helps in binding the ingredients, absorbs excessive moisture and will make our cheese potato balls crispy.

Further, we have mixed and divided into portions. If the mixture doesn't hold together, add more refined flour. Next, we have shaped each portion in a flat ball, placed mozarella cheese in the center and shaped them into round balls. Next, dipped them in cornflour slurry and rolled in bread crumbs and deep fried until golden brown and cooked. Instead of bread crumbs, you can make use of panko crumbs or crushed cornflakes to coat the cheese potato ball. Always while coating with breadcrumbs and slurry, make use of two different hands so the breadcrumbs don’t turn soggy and there is a limited mess.

Ingredients

1 1/2 cups boiled and mashed potatoes
10 cheese cubes
1/4 cup chopped capsicum
1/4 cup chopped coriander (dhania)
2 tsp chopped green chillies
1 tsp garlic (lehsun) paste
1/2 tsp ginger (adrak) paste
1/2 tsp dry red chilli flakes (paprika)
1/2 tsp dried oregano
2 tbsp plain flour (maida)
salt to taste
2 tbsp cornflour
oil for deep-frying
1/2 cup bread crumbs for rolling

  1. To make potato cheese stuffed balls, combine the cornflour and ¼ cup of water in a bowl, mix well and keep aside.
  2. Combine potato, capsicum, coriander, green chilli, garlic paste, ginger paste, red chilli flakes, oregano, maida and salt and mix well using your hands.
  3. Divide the mixture into 10 equal portions and shape each portion into small rounds.
  4. Shape each portion into a flat round and put a cube of cheese in the center.
  5. Bring all the sides together, seal them completely and roll them again lightly.
  6. Dip each ball into the prepared cornflour water mixture and roll it in bread crumbs till they are evenly coated from all the sides.
  7. Heat the oil in a deep non-stick pan and deep-fry a few balls at a time on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
  8. Serve the potato cheese stuffed balls immediately with tomato ketchup.

  1. To make a slurry for potato cheese-stuffed balls, in a bowl take cornflour.

  4. To make potato balls, in a deep bowl take boiled and mashed potatoes. Preferably make use of leftover potatoes that are cold. If boiling potatoes freshly, then either cook them in a pressure cooker or directly on a stovetop. But, make sure you cool them completely and they have very less moisture before you start making the mixture.
  5. Add capsicum. They give a nice colour and crunch to the potato cheese-stuffed balls. Other crunchy vegetables like peas, corn, broccoli, spring onions, bell pepper can also be used.
  6. Add coriander.
  7. Add green chilli.
  8. Add garlic paste and ginger paste.
