  1. To make kodri pulao, heat the oil in a non-stick kadhai, add the celery, spring onion whites, french beans carrots, capsicum, cabbage and bean sprouts, mix well and sauté on a high flame for 3 to 4 minutes while stirring continuously.
  2. Add the cooked kodri, soya sauce, spring onion greens, vinegar and salt, toss gently and sauté on a high flame for another minute, while stirring gently once in between.
  3. Serve indo chinese foxtail millet rice hot with chillies in vinegar and chilli sauce.

  2. Add 1 tbsp chopped celery (ajmoda).
  3. Add 1/2 cup chopped spring onions whites.
  4. Add 1/2 cup thinly diagonally cut french beans.
  5. Add 1/4 cup thinly sliced carrots.
  6. Add 1/2 cup thinly sliced coloured capsicum.
  7. Add 1/2 cup shredded cabbage.
  8. Add 1/2 cup bean sprouts.
  9. Mix well.
  10. Sauté on a high flame for 3 to 4 minutes while stirring continuously.
  11. Add 2 1/2 cups cooked kodri (varagu).
  12. Add 1 tsp soy sauce. Increase quantity if you like the flavour of soya sauce.
  13. Add 1 cup chopped spring onion greens.
  14. Add 1 tsp vinegar. This gives the sourness to the pulao.
  15. Add salt to taste. We added 1/2 tsp salt. Don't add too much salt as we have used soya sauce in the pulao. If you increase the soya sauce, then cut the salt used.
  16. Toss gently.

Thanks for this healthy recipe. Kodri is healthy and tasty too as it absorbs the flavours of any spice or gravy.
