For Vegetables
2 tsp ghee
1/2 cup cauliflower florets
1/4 cup fresh green peas
1/4 cup chopped carrot
1/4 cup chopped french beans

Other Ingredients For Bengali Khichuri
1/2 cup brown rice
3/4 cup yellow moong dal (split yellow gram)
1 tsp ghee
1 clove (laung / lavang)
1 small cinnamon (dalchini)
1/4 cup chopped tomatoes
2 tsp finely chopped green chillies
1/2 tsp turmeric powder (haldi)
1/4 tsp garam masala
salt to taste

For Serving With Bengali Khichuri
fresh curd (dahi)

  1. To make bengali khichuri, soak the brown rice in enough hot water for 1 hour. Drain and keep aside.
  2. Dry roast the yellow moong dal in a broad pan for 3 to 4 minutes, while stirring continuously. Remove in plate and keep aside.
  3. Heat 2 tsp ghee in a pressure cooker, add the cauliflower florets and saute on a medium flame for 2 minutes.
  4. Add the green peas, carrot and french beans and sauté on a medium flame for 2 minutes, remove the veggies in a plate and keep aside.
  5. In the same pressure cooker, add 1 tsp of the remaining ghee, add the clove, cinnamon and cardamom, sauté on a medium flame for few seconds.
  6. Add the tomatoes, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  7. Add the green chillies, turmeric powder, garam masala and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  8. Add the sauteéd vegetables, mix well and cook on a medium flame for seconds, while stirring occasionally.
  9. Add the roasted moong dal, soaked and drained brown rice and 3 cups of water.
  10. Mix well and pressure cook for 4 whistles.
  11. Allow the steam to escape before opening the lid.
  12. Serve bengali khichuri hot with fresh curd.
