Chilli Coin Potato

Here is tasty, yummy and delicious chinese style vegetable which is made from potatoes which are marinated with lots of spices, chinese sauce, and corn flour with red-orange colour which i have used to make it attractive and then deep fried. As the name suggests it is made from potato but with other vegetables like capsicum, cabbage and onion etc.

Ingredients


To Be Mixed Into A Marinade
salt to taste
1 tsp white pepper powder
2 tsp vinegar
2 tsp ginger (adrak)
2 tsp soy sauce
2 tsp plain flour (maida)
2 tsp cornflour
a pinch of red-orange colour , dissolved in water

Other Ingredients
4 large potatoes , cut into roundels and blanched
oil for deep frying
2 tsp oil
1 cup chopped cabbage
1 cup chopped capsicum (red , yellow and green)
1/2 cup chopped spring onions
2 tsp grated ginger (adrak)
2 tsp soy sauce
2 tsp vinegar
1 tsp white pepper powder
2 tsp red chili sauce
2 tsp tomato ketchup
salt to taste

    Method
  1. Add the potatoes to the marinade, mix well and keep aside for 20-30 minutes.
  2. Heat the oil in a kadhai and deep fry the potatoes, till they turn golden brown and crisp from all the sides.
  3. Drain on absorbent paper and keep aside.
  4. Heat 2 tsp of oil in non stick pan, add the ginger-garlic paste and sauté for a while.
  5. Add the cabbage, capsicum and onions, mix well and sauté for a minute.
  6. Add soya sauce, vinegar, tomato sauce and red chili sauce, mix well.
  7. Now add the potato slices, salt and white pepper powder, mix well
  8. Serve hot.
