For Chocolate Coconut Cake
1 1/2 cups plain flour (maida)
3/4 tsp baking powder
3/4 cup softened butter
1/4 cup brown sugar
1/4 cup condensed milk
3/4 cup milk
1/2 cup desiccated coconut
1/2 cup grated dark chocolate
1 tsp vanilla essence
plain flour (maida) for dusting
melted butter for brushing

  1. Sieve the flour with the baking powder. Keep aside.
  2. Cream the butter and brown sugar till light and fluffy.
  3. Add the condensed milk and mix well.
  4. Add the milk, desiccated coconut, chocolate and vanilla essence and ix well.
  5. Add the plain flour-baking powder mixture and fold in gently.
  6. Pour into a 200 mm. (8") diameter greased and dusted cake tin.
  7. Bake in a pre-heated oven at 180°c (360°f) for 25 to 30 minutes, until the cake is golden brown in colour or a knife inserted in the cake comes out clean.
  8. Cut into wedges and serve.
