If you do not have jada gehun ka atta then make use of the fine variety with an addition of 1-2 tbsp of rava to get the coarse texture in churma laddoo. 3. Combine all the ingredients and knead into a stiff dough. We don’t have to knead the dough like we do for breads. 4. The dough portion should be firm such that if you drop them for frying, it should not break or crumble in oil. 5. 1 1/2 cups coarse whole wheat flour (jada gehun ka atta)
4 tbsp ghee
1/4 cup grated dry coconut (kopra)
2 tbsp sesame seeds (til)
ghee for deep-frying
3/4 cup chopped jaggery (gur)
1 tbsp milk , optional
poppy seeds (khus-khus) for rolling

  1. Heat 1 tbsp of ghee in a broad non-stick pan, add the coconut and sesame seeds and sauté on a medium flame for 2 minutes. Keep aside.

  1. To make churma ladoo, combine the whole wheat flour and ½ cup of water in a deep bowl and knead into a stiff dough.
  2. Divide the dough into 8 equal portions and shape each portion into the shape of your fist and press with your fingers in the centre of each portion to make an indentation.
  3. Heat the ghee in a deep non-stick kadhai and deep-fry 4 dough portions at a time, on a medium flame for 20 minutes or till they turn golden brown in colour from all the sides. Drain on an absorbent paper and allow them to cool.
  4. Repeat step 4 to deep-fry 4 more dough portions.
  5. Once cooled, break them into pieces and blend in a mixer to a fine powder. Keep aside.
  6. Heat the remaining 3 tbsp of ghee in a broad non-stick pan, add the jaggery and 1 tbsp of water, mix well and cook on a slow flame for 3 to 4 minutes, while stirring continuously. Keep the churma aside.
  7. Combine the churma, melted jaggery and coconut-sesame seeds mixture in a deep bowl and mix very well. Allow the mixture to cool slightly.
  8. Divide the mixture into 11 equal portions and shape each portion into a round ball and roll in the poppy seeds till they are evenly coated from all the sides.
  9. Serve the churma ladoo immediately or store in an air-tight container.

  5. Divide the dough into 8 equal portions. Shape each portion into the shape of your fist. The dough portion should be firm such that if you drop them for frying, it should not break or crumble in oil.
  6. Press with your fingers in the centre of each portion to make an indentation.

  13. Blend to a fine powder. This smooth mixture is called “churma”.
  14. Remove the churma in a deep bowl and keep aside.

  2. Also, add 1 tbsp of water. This will help in breaking the jaggery.
  3. Mix well and cook on a low flame for 3 to 4 minutes, while stirring continuously.
  4. Remove from the flame and add to the prepared churma mixture.
  5. Add the coconut-sesame seeds mixture. You can also add coarsely crushed or finely chopped dry fruits like almonds, pistachios and cashews to the mixture.
  6. If you wish to, add milk to bring everything together. For an added flavour, you can also add cardamom powder or nutmeg powder.
  7. Mix very well and allow the mixture to cool slightly. You can enjoy this churma in powdered form along with Rajasthani meal of dal baati.
  8. You can divide the mixture into 11 equal portions. Shape each portion into a round ball. You can also use mould for making churma na ladwa.
  9. Roll churma laddu in the poppy seeds till they are evenly coated from all sides. Poppy seeds will not stick if churma ladoo | Rajasthani churma ladoo |  atta churma ladoo | becomes cool.

   Probably you fried them in ghee till they became really dark and burnt which gave a bitter taste.

I have tried this recipe but it doesn''t turn out crunchy. ladoos look like wet & soft. what should be the jaggery consistancy.

   Hi, These ladoos have to be deep-fried on a medium flame as mentioned and as long as 20 minutes so make sure the flame and the timings are followed...
