Ingredients

10 cream cracker biscuit
5 tsp grated mozzarella cheese

For The Topping
1 tsp oil
1/4 cup finely chopped onions
1/2 cup finely chopped spinach (palak)
2 green chillies , finely chopped
1/2 cup cooked sweet corn kernels (makai ke dane)
(makai ke dane)
1 tsp plain flour (maida)
1/4 cup low fat milk (99.7% fat-free , readily available in the market)
salt and to taste

Method

  1. Heat the oil in a non-stick pan, add the onions and sauté on a medium flame for a minute, while stirring continuously.
  2. Add the spinach and green chillies, mix well and sauté on a high flame for 5 minutes, while stirring continuously or till the water evaporates. (drain the extra water).
  3. Add the corn, milk-flour mixture, salt and pepper, mix gently and cook on a medium flame for another 2 to 3 minutes or till the mixture thickens. Keep aside.

  1. Place the cream cracker biscuits in a baking tray, spread 1 heaped tbsp of the topping evenly over each biscuit and sprinkle with ½ tsp of cheese.
  2. Bake in a pre-heated oven at 200°c (400°f) for 2 minutes or till the cheese melts.
  3. Serve hot.
