  1. Heat the oil in a broad non-stick pan and add the mustard seeds.
  2. When the seeds crackle, add the curry leaves and asafoetida and sauté on a medium flame for a few seconds.
  3. Add the potatoes, madras onions and 1½ cups of water and cook on a medium flame for 8 to 10 minutes or till the vegetables are soft, while stirring occasionally.
  4. Add the sambhar masala, mix well and cook on a medium flame for 1 minute.
  5. Add the corn, salt and 1½ cups of water, mix well and bring to a boil.
  6. Serve hot garnished with coriander.

  1. Instead of grating the corn cobs, 1 cup coarsely crushed corn kernels can also be used.
