  1. Combine the carrots, cucumber and coconut in a bowl and mix well.
  2. Add the green chillies and lemon juice and salt and mix well.
  3. Heat the oil for the tempering and add the mustard and cumin seeds.
  4. When the seeds crackle, add the curry leaves and saute for 10 seconds.
  5. Pour this tempering to the carrots and toss well.
  6. Serve immediately or chilled.
