  1. To make homemade skimmed milk, use a deep steel vessel and put 2 tablespoons of water at the base to prevent the full fat milk from burning when it is boiled. You can also use a deep non stick pan.
  2. Add the full fat milk also called buffalo milk. Note that you cannot use cow milk to make skim milk.
  3. Boil the full fat milk on a medium flame which will take about 8 to 10 minutes.
  4. Cool for atleast 2 to 3 hours.
  5. Put in the refrigerator for atleast 10 to 12 hours. This is what it looks like when you take the milk out of the fridge with a layer or malai or cream forming on top. This is the fat we are skimming off the milk.  
  6. Remove the cream or malai from the top off the milk. We are removing the fat of the milk to make skim milk.
  7. Boil the full fat milk again on a medium flame which will take about 8 to 10 minutes and then cool for 2 to 3 hours. Then put in the refrigerator for 10 to 12 hours. This is the second time we are doing this. Here is what the skim milk 2 looks like. We are calling it 2, as this is the second boiling of the full fat milk.
  8. Remove the cream or malai for the second time. We can see that the amount of malai has decreased as we make the skim milk. The fat of the milk has now come down significantly. Note that each time you remove the cream, store it in a air tight container and put it in the freezer to make white butter and ghee.
  9. Boil the full fat milk again on a medium flame which will take about 8 to 10 minutes and then cool for 2 to 3 hours. Then put in the refrigerator for 10 to 12 hours. This is the third time we are doing this. Here is what the skim milk 3 looks like. We are calling it 3, as this is the third boiling of the full fat milk.
  10. Remove the cream or malai from the top off the milk. We are removing the fat of the milk to make skim milk. You can see there is very little cream left. So take out all the cream.
  11. Your homemade skimmed milk is finally ready after three steps of boiling and removing the cream or malai.

Is this recipe good for using milk to drink? Or just to cook with? I have started buying whole milk from a local farm whose ethical practices we really want to support...but we really prefer want to find a way to make it taste more like skim milk.

This recipe seems super easy. But could I reduce more fat from a low fat milk say Amul Taza milk??. Its already lower in fat but I wish to reduce more to cut the calories

   Dear Tessie, You are correct. The fat count is high in the nutritive value table. The reason is that the calculation as shown in this recipe is based on its ingredient - full fat milk. However since the process of skimming is done at home as shown in this recipe, it is difficult to find out the fat content of final skim milk. The ready made skim available in the market has 0.2 g of fat in a cup (200 ml). The estimated fat content of this homemade skim milk can be estimated to be slightly higher than ready made skim milk.
