Ingredients

250 gms ladies finger (bhindi) , slits made lenghtwise
2 tbsp oil
1/4 tsp cumin seeds (jeera)
2 pinches asafoetida (hing)
1 onion , finely chopped
1 capsicum , finely chopped
salt to taste
1 tbsp chopped tomatoes
1 tsp finely chopped coriander (dhania)

To Be Mixed Together For The Stuffing
1 tsp powdered peanuts
1 tsp chilli powder
1 1/2 tsp coriander (dhania) powder
1/4 tsp turmeric powder (haldi)
1/2 tsp dried mango powder (amchur)

    Method
  1. Stuff wach ladies finger with the prepared masala filling and keep aside.
  2. Heat the oil in a kadhai and add the cumin seeds, curry leaves and asafoetida.
  3. When the seeds crackle, add the onions and saute till they turn transparent
  4. Add the ladies finger and capsicum and mix well.
  5. Sprinkle some water and cover and cook till the ladies finger becomes soft and tender.
  6. Add the tomatoes, mix well and cook for more 2 minutes.
  7. Serve hot garnished with coriander.
