Ingredients


For Moong Dal Panki
1 cup yellow moong dal (split yellow gram) , soaked for 3 hours
1 tbsp green chillies , roughly chopped
2 tbsp fresh curd (dahi)
1/4 tsp asafoetida (hing)
4 tbsp finely chopped coriander (dhania)
4 tsp besan (bengal gram flour)
2 tsp oil or
salt to taste
1/2 tsp lemon juice
1 tsp fruit salt
4 banana leaves (kele ka patta)
1 tsp oil for greasing and cooking

Method

For moong dal panki

  1. To make {span class="bold1"}moong dal panki{/span}, soak the yellow moong dal for 3 hours.
  2. Combine the soaked yellow moong dal, curds, green chillies and 1/2 cup water and blend in a mixer to a smooth paste.
  3. Add the asafoetida, coriander, besan , oil, salt and mix well.
  4. Add the lemon juice and fruit salt, mix lightly and keep aside.
  5. Apply a little oil on one side of each banana leaf and keep aside.
  6. Put 11/2 tbsps of the batter on the greased side of a banana leaf.
  7. Cover with another banana leaf with the greased side over the batter press it gently to spread the batter evenly to make a thin layer.
  8. Heat on a non-stick a tava (griddle) and cook till light brown spots appear on both the sides of the leaves and the panki in between peels off the leaf easily.
  9. Repeat with the remaining ingredients to make 14 more moong dal pankis.
  10. Serve {span class="bold1"}moong dal panki{/span} immediately with green chutney or coconut chutney.
