How to make Potato Cheese Stuffed Balls-
To make a slurry for potato cheese-stuffed balls, in a bowl take cornflour.

Mix well and keep aside.

To make potato balls, in a deep bowl take boiled and mashed potatoes. Preferably make use of leftover potatoes that are cold. If boiling potatoes freshly, then either cook them in a pressure cooker or directly on a stovetop. But, make sure you cool them completely and they have very less moisture before you start making the mixture.

Add capsicum. They give a nice colour and crunch to the potato cheese-stuffed balls. Other crunchy vegetables like peas, corn, broccoli, spring onions, bell pepper can also be used.

Add coriander.

Add green chilli.

Add garlic paste and ginger paste.

Add red chilli flakes. Potatoes being a very bland ingredient, we are making use of both green chilli paste and chilli flakes to provide a fiery hint to potato and cheese balls. If making for kids and they do not prefer spice then skip adding chilli flakes or replace chilli flakes with chilli powder or black pepper powder so, they don’t get that spicy bite.

Add oregano.

Add maida. It not only absorbs excess moisture from the mixture but also, helps in binding ingredients and making the cheesy potato balls crispy.

Add salt.

Mix well using your hands. Divide the mixture into 10 equal portions and shape each portion into small rounds. If the mixture doesn't hold, then add some more refined flour.

Shape a portion into a flat round.

Put a cube of cheese in the centre. We have used processed cheese cubes, but you can make use of cheddar or Mozzarella cheese if you like.

Bring all the sides together. Seal them completely and roll them again lightly.

Similarly, stuff and shape all the portions to make 10 potato cheese-stuffed balls.

Dip a ball into the prepared cornflour water mixture.

Roll it in bread crumbs till they are evenly coated from all the sides. Instead of bread crumbs, you can make use of panko crumbs or crushed cornflakes to coat the cheese potato ball. Always while coating with breadcrumbs and slurry, make use of two different hands so the breadcrumbs don’t turn soggy and there is a limited mess.

Repeat the dipping and coating process to prepare all the 10 potato cheese stuffed balls. If not frying immediately, refrigerate the potato cheese-stuffed balls until frying, refrigerating also makes them firm.

For frying aloo cheese balls, heat the oil in a deep non-stick pan and drop a few balls at a time. To check if the oil is hot or not, drop a little mixture and if it comes up easily (after a few seconds) and you see small sizzling bubbles then the oil is ready to fry the cheese-stuffed mashed potato balls. If the mixture does not come up easily, the oil is not hot & if the mixture comes up quickly, the oil is hotter. So adjust the temperature accordingly to fry the loaded cheesy mashed potato balls evenly.

Deep-fry cheese stuffed potato balls on a medium flame till they turn golden brown in colour from all the sides. Depending upon the size of the pan and potato cheese balls, add 3-4 balls at a time and ensure the pan is not crowded or else the cheesy potato balls will stick to each other and break.

With the help of a slotted spoon, remove the potato cheese-stuffed balls and drain on an absorbent paper.
