Remove the semi-set ice-cream from the freezer and transfer it in a mixer and blend till smooth. Transfer the mixture back into the same aluminium shallow container, add the almonds and chocolate chips and mix well. Cover with an aluminium foil and freeze for approx. 10 hours or till set. Scoop and serve immediately.

  1. To make roasted almond ice cream, combine the cornflour and ¼ cup of cold milk in a bowl, mix well and keep aside.
  2. Pour the remaining 2¼ cups of milk and sugar in a deep non-stick pan, mix well and cook on a medium flame for 4 minutes, while stirring occasionally.
  3. Add the cornflour-milk mixture, mix well and cook on a medium flame for 1 to 2 minutes ,while stirring continuously.
  4. Remove the mixture from the flame and cool completely.
  5. Once cooled, add the fresh cream and vanilla essence and mix well.
  6. Pour the mixture into a shallow aluminium container. Cover with an aluminium foil and freeze for 6 hours or till semi-set.
  7. Remove the semi-set ice-cream from the freezer and transfer it in a mixer and blend till smooth.
  8. Transfer the mixture back into the same aluminium shallow container, add the almonds and chocolate chips and mix well.
  9. Cover with an aluminium foil and freeze for approx. 10 hours or till set.
  10. Scoop and serve the roasted almond ice cream immediately.

In addition, smell the almonds. They should smell sweet and nutty; if their odor is sharp or bitter, they are rancid.
  2. Dry roast them on a medium flame. Toss them continuously with a wooden spoon for about 2 minutes to avoid burning.
  3. Remove them from the heat when they are either light or dark brown, whichever is preferred, and then let them cool down.
  4. Place them on a chopping board and slice with a sharp knife lengthwise into long slivers. Keep aside.

when I tasted the semi set ice cream..it was giving flavour of corn flour. ( a what must have gone wrong ?) after adding the cornflour to the heated milk is the milk to be brought to boil ?

   Hello, Yes, you have to heat the milk after adding cornflour. Refer step 3 Add the cornflour-milk mixture, mix well and cook on a medium flame for 1 to 2 minutes while stirring continuously.

I like all ur recps.u r doing great.bt m confuse u mixed cmc nd gms in ice cream base that can be used in all icecreams.in this ice cream u didn''t add y? Plz reply

   Dear Mousa, I believe there is slight confusion in understanding our other ice-cream recipes. We generally do not use any kind of food colours or preservatives. We have always used cornflour and cream as a thickening agent for all our ice-cream recipes. Just in case you have come across any recipe mentioning CMC or GMS, please revert back to us.
