Ingredients

1 red capsicum
1/2 tsp oil for brushing
1/4 cup mayonnaise
1 tsp dry red chilli flakes (paprika)
salt to taste

For Serving

Method
    Method
  1. Pierce a fork through the capsicum, brush oil evenly over it and roast on a slow flame till it turns black in colour from all the sides.
  2. Immerse the capsicum in cold water, remove the skin, stem and seeds and roughly chop them.
  3. Combine the red capsicum with all the remaining ingredients and blend in a mixer till smooth.
  4. Serve with potato wedges.

I made this for a party and it was fab..the taste of the burnt capsicum blended with mayonnaise, chilli flakes and salt was great...I served with hot potato wedges...
