1 cup arugula leaves , put in cold and then dried
1/2 cup blanched broccoli florets
1 cup coloured capsicum cubes
1/4 cup carrot juliennes
1/4 cup cucumber strips
1/2 cup zucchini strips
1 tbsp alfalfa sprouts

To Be Mixed Into A Dressing
2 tsp olive oil
1 tsp lemon juice
salt and to taste

  1. It can be taken to work in a lunch box with a dressing in a separate small container.
  2. Just before eating, mix the dressing and toss well. Eat immediately.
