The sev murmura recipe features a mix of two all-time favourites – sev and kurmura – in a handy dry form. It is a light and easy to make dry snack. This has lesser calories than any other street food recipe.

In this scrumptious Gujarati sev kurmura jar snack, the sev and puffed rice are sautéed in oil with a dash of spices. This helps the flavours to sink in well, and also keeps the puffed rice crisp and nice for some days.

You can also add in onions, tomatoes some chutneys and use the sev murmura in making bhel puri. I usually prepare sev murmura and store it in an air-tight container for midnight cravings and hunger pangs. Also, you can serve it to your guests and makes a perfect Indian travel dry snack. My kids also prefer taking it along with them to school as a kids tiffin treat!

1 cup sev
4 cups puffed rice (kurmura)
1 tbsp oil
7 to 8 curry leaves (kadi patta)
1/2 tsp turmeric powder (haldi)
1/4 tsp chilli powder
salt to taste

Method

  1. To make sev murmura , heat the oil in a deep non-stick pan, add the curry leaves, turmeric powder and chilli powder, mix well and sauté on a medium flame for 10 seconds, while stirring continuously.
  2. Add the puffed rice and salt, mix well and cook on a slow flame for 10 minutes, while stirring continuously.
  3. Add the sev, mix well and cook on a slow flame for 2 minutes, while stirring continuously.
  4. Cool the sev murmura completely and store in an air-tight container.
  5. Use as required.

  1. To prepare Sev Kurmura or Sev mamra at home, place the kurmura on a big chalni (sieve) and sift them to get rid of any dirt and excess skin. Make use of fresh, good quality murmura to get tasty, crunchy sev mamra.
  2. To temper vagharela sev mamra, heat the oil in a deep non-stick pan.
  3. Once the oil is hot, add the curry leaves. Garlic lovers can toss in some garlic cloves at this stage to prepare spicy garlic puffed rice.
  4. Add turmeric powder for a nice bright yellow colour and chilli powder to flavour up the masala puffed rice recipe.
  5. Mix well and sauté on a medium flame for 10 seconds, while stirring continuously. Ensure the spices do not burn or else the sev kurmura will taste bitter.
  6. Add the puffed rice. If your puffed rice is little soggy or old, dry roast them first before adding to the pan.
  7. Sprinkle salt. If preparing for kids, add sugar. It makes a huge difference in flavours and they would love it. My mother also makes use of black salt for a sharp taste. You can add that too if you like.
  8. Mix well to spread the spices in kurmura evenly.
  9. Cook on a slow flame for 10 minutes, while stirring continuously.
  10. Add the sev. You can add thick or thin variety of sev as per your choice.
