  1. Heat the oil in a broad non-stick pan, add the onions, ginger and garlic and sauté on a medium flame for 1 minute.
  2. Add the capsicum, green chillies, turmeric powder and black salt and sauté for a minute.
  3. Add the paneer and sauté on a medium flame for 1 to 2 minutes.
  4. Add the coriander, mint leaves, lemon juice and salt, mix well and cook on a medium flame for 1 minute.
  5. Divide the topping into 4 equal portions and keep aside.
  6. Place the toasted bread slices on a clean dry surface and spread a portion of the topping evenly on each bread slice.
  7. Cut into 4 pieces and serve immediately.

Low fat paneer and brown bread - my 2 favourites in one snack, wow a superb combo...Moreover it''s nice to know the snack is just at 107 calories and can be added to a diabetic menu occasionally. My father who is a diabetic enjoyed it and so did the other family members.

Nice low fat paneer snack which is toasted with some vegetables. The lemon juice and mint leave a nice tangy taste and the green chillies spice it up. Great in between snack to have during the day.
