  1. To make sweet mathri recipe | meethi mathri | maida ki meethi mathri | Gujarati mathri, we first need maida. The maida should be free of lumps. Sieve it if necessary. Place 1¼ cups maida in a deep bowl. 
  2. Add 2½ tbsp powdered sugar to it. If you don’t have powdered sugar, grind the table sugar in a mixer and sieve it before use.
  3. Add 1 tbsp pf ghee to it. This adds slight flaky texture to the mathri.
  4. Add 2½ tbsp. of milk to it. This is binding the dough. You can add it gradually if you wish to because often the quantity of liquid required to knead the dough depends on the quality of the flour. 
  5. Add a pinch of nutmeg powder. 
  6. Add a pinch of salt. Though this is meethi mathri – tea time snack, a pinch of salt always helps to perk up the flavour of the dish. 
  7. Mix all the ingredients with your fingertips. 
  8. Knead into a stiff dough without using any water. A stiff dough is necessary to get crunchy mathri.
  9. Cover the bowl with a lid and keep aside for 15 minutes.
