  1. In a bowl put 2 cups whole wheat flour (gehun ka atta). Roti made with whole wheat flour tends to have a slightly chewier texture compared to those made with refined flour.
  2. Add 1/2 cup finely chopped onions. Finely chopped onions add a subtle savory and slightly sweet flavor to the roti dough.
  3. Add ¼ cup of fresh chopped mint leaves. Mint leaves add a burst of freshness and a unique, slightly sweet and cooling aroma to the roti. This complements the savory flavors of the onions and spices used in the recipe.
  4. Add 1 1/2 tsp chopped green chillies. Green chilies are used in the dough of Pyaz Aur Pudine ki Roti (Onion and Mint Flatbread) as they add a subtle heat and a touch of spice to the otherwise mild dough.
  5. Add 1 tbsp oil. Oil can contribute to a slightly softer and richer texture in the final roti compared to one made with no oil. This can be desirable for some people, creating a more melt-in-your-mouth kind of flatbread.
  6. Add salt to taste. We added 3/4th tsp salt.
  7. Add enough water to make a stiff dough. We added 3/4th cup water.
  8. Knead into a stiff dough.

Onion and phudine (mint leaves) combine to make a nice healthy roti cooked with whole wheat flour. Simple and quick to make and goes well with some curd.
