  1. To make aloo aur kaddu ki subzi, heat the ghee in a broad non-stick pan, add the bay leaf, cinnamon, clove, cardamom, nigella seeds, mustard seeds and fenugreek seeds and sauté on a medium flame for a few seconds.
  2. When the seeds crackle, add the curds, asafoetida, chilli powder, coriander-cumin seeds powder and turmeric powder and sauté on a medium flame for 30 seconds.
  3. Add the tomatoes and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the potatoes, pumpkin and ½ cup of water, mix well, cover and cook on a slow flame for 15 to 20 minutes or until the potatoes and pumpkin are cooked, while stirring occasionally.
  5. Add the amchur powder, sugar and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  6. Serve the aloo aur kaddu ki subzi immediately.

  3. Add 1 stick cinnamon (dalchini).
  4. Add clove (laung / lavang).
  5. Add cardamom (elaichi).
  6. Add 1/2 tsp nigella seeds (kalonji).
  7. Add 1/4 tsp mustard seeds ( rai / sarson).
  8. Add 1/4 tsp fenugreek (methi) seeds.
  9. Sauté on a medium flame for a few seconds. Let the seeds crackle.
  10. Add 1 tbsp whisked curds (dahi).
  11. Add a pinch of asafoetida (hing).
  12. Add 1/2 tsp chilli powder.
  13. Add 1 tsp coriander-cumin seeds (dhania-jeera) powder.
  14. Add 1/4 tsp turmeric powder (haldi).
  15. Sauté on a medium flame for 30 seconds.
  16. Add 1/4 cup chopped tomatoes.
  17. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  18. Add 2 1/4 cups peeled potato cubes.
  19. Add 2 1/4 cups peeled red pumpkin (bhopla / kaddu) cubes.
  20. Add ½ cup of water.
  21. Add salt to taste. We added 1 tsp salt.
  22. Mix well.
  23. Cover and cook on a slow flame for 15 to 20 minutes or until the potatoes and pumpkin are cooked, while stirring occasionally.
  24. After cooking for 15 to 20 minutes.
  25. Add 1/2 tsp dried mango powder (amchur).
  26. Add 1/4 tsp sugar.
  27. Mix well.
  28. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  29. Serve aloo aur kaddu ki sabzi | kaddu aloo sabzi | Rajasthani aloo aur kaddu ki sabzi | immediately with bajra roti or roti.

Aloo and red pumpkin cooked in a Marwari style. Dry, mild spiced and fab vegetable. For a person who never eats pumpkin, I truly loved this.
