Aloo Cheese Frankie recipe - How to make Aloo Cheese Frankie

Ingredients


For The Rotis
3/4 cup plain flour (maida)
1/2 tbsp oil
salt to taste
plain flour (maida) for rolling
oil for cooking

For The Potato Rolls
1 1/2 cups boiled , peeled and mashed potatoes
1/2 cup grated processed cheese
3 tbsp cornflour
2 tsp finely chopped green chillies
1/2 tsp garam masala
1 tsp lemon juice
salt to taste
oil for deep-frying

To Be Mixed Into Masala Water
2 tbsp water
1/2 tsp chilli powder
1 tsp dried mango powder (amchur)
1/4 tsp garam masala
salt to taste

To Be Mixed Into An Onion Masala Mixture
1/2 cup chopped onions
1/2 tsp chilli powder
1/2 tsp dried mango powder (amchur)
salt to taste

Method
For the rotis

    For the rotis
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Divide the dough into 6 equal portions and roll each portion into a 125 mm. (6”) diameter circle using a little plain flour for rolling.
  3. Heat a non-stick tava (griddle) and cook each roti, using a little oil, till golden brown spots appear on both the sides. Keep aside.

For the potato rolls

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture into 6 equal portions and roll each portion into a cylindrical roll.
  3. Heat the oil in a deep non-stick kadhai and deep-fry, 3 rolls at a time, till they turn golden brown in colour from all the sides. Keep aside.

  1. Place a roti on a clean, dry surface and drizzle little masala water evenly over it.
  2. Place a potato roll in the centre, finally top with a little onion masala mixture, roll it up tightly and seal it with a toothpick.
  3. Repeat steps 1 and 2 to make 5 more frankies.
  4. Serve immediately.

For the rotis

  1. To prepare roti for aloo cheese frankie, in a deep bowl take plain flour. Maida makes the roti more pliable and helps in keeping them soft for a longer period of time.
  2. Add oil. It makes in keeping the roti soft.
  3. Add salt to taste.
  4. Combine all the ingredients in a deep bowl and gradually add water to form a dough.
  5. Knead it into a soft dough using enough water.
  6. Divide the dough into 6 equal portions.
  7. Roll a portion of the dough into a 125 mm. (6”) diameter circle using a little plain flour for rolling. You can roll them big or small depending on how big you want the aloo cheese rolls.
  8. To cook the roti, heat a non-stick tava (griddle) and place the roti.
  9. Apply a little oil. Do not apply too much oil or else the roti will turn crispy and break while rolling.
  10. Cook the roti till golden brown spots appear on both the sides. If not preparing potato cheese rolls immediately, partially cook the roti just like the roadside Frankie seller does and just before assembling, cook the roti completely and then prepare the roll.
  11. Remove the roti in a plate. To quickly make this cheese potato roll recipe, you can make use of leftover roti too.
  12. Repeat step 7 to 11 and make 5 more rotis. Stack them one above another, this will help in maintaining the softness and prevents the roti from drying out.

For the potato rolls

  1. To make potato rolls for aloo cheese Frankie in a deep bowl take boiled, peeled and mashed potatoes.
  2. Add grated processed cheese. While we have used processed cheese, you can make use of any variety of cheese you like. Cheddar, Mozarella, Cottage cheese, ricotta are some cheese that works well in a Frankie.
  3. Add cornflour. This helps in binding together all the ingredients and prevent the potato cheese roll from breaking while frying.
  4. Add finely chopped green chillies. If preparing for kids, add chilli powder or green chilli paste to not get that spicy bite from chillies.
  5. Add garam masala.
  6. Add lemon juice or vinegar for a tangy flavour.
  7. Add salt to taste.
  8. Combine all the ingredients and mix well. Taste once and adjust the quantity of all the spices to your liking.
  9. Divide the mixture into 6 equal portions. Roll each portion into a cylindrical roll. You can even make round tikki if not cylindrical.
  10. Roll and cover in corn flour. 
  11. To cook the aloo cheese rolls, heat the oil in a deep non-stick pan and carefully drop 3 rolls at a time.
  12. Fry on a medium flame till they turn golden brown in colour from one side.
  13. Turn and cook the aloo cheese rolls till they are golden brown and crisp from all the sides. Health-conscious people can pan-fry or shallow fry the potato and cheese roll.
  14. Drain aloo cheese rolls on an absorbent paper and keep aside.
  15. Similarly, deep-fry all the potato and cheese rolls. Keep aside.

To Be Mixed Into Masala Water

  1. In a small bowl, take 2 tbsp water.
  2. Add chilli powder.
  3. Add dried mango powder. Chaat masala, vinegar or lemon juice can be used as a substitute.
  4. Add ½ tsp garam masala.
  5. Add salt. Mix well and our masala water is ready. Keep aside.

To Be Mixed Into An Onion Masala Mixture

  1. To prepare masala onion mixture, take finely chopped onions in a bowl. If you are Jain, then make use of cabbage or any other veggies like carrot, beetroot etc
  2. Add chilli powder.
  3. Add dried mango powder.
  4. Add salt to taste.
  5. Mix well. This onion masala mixture is a crunchy element of aloo cheese frankie.

How to make aloo cheese frankie

  1. To prepare aloo cheese frankie, place a roti on a clean, dry surface.
  2. Drizzle little masala water evenly over it.
  3. Place a potato roll in the centre.
  4. Finally, top aloo cheese frankie a little onion masala mixture.
  5. Roll it up tightly and our cheese aloo wrap is ready.
  6. Seal the aloo cheese wrap with a toothpick.
