  1. Combine the cloves, cardamom, black peppercorns and cinnamon in a broad non-stick pan and dry roast on a medium flame for 1 minute.
  2. Transfer into a plate and keep aside to cool completely.
  3. Once cooled, add the dried ginger powder, nutmeg powder and blend in a mixer to a smooth powder.
  4. Store in an air-tight container and use as required.

How to make Chai ka Masala:

  1. To make Chai ka Masala, heat a broad non-stick pan on a medium flame. When the pan is hot enough, add the cloves.
  2. Now, add the cardamom.
  3. Also add the black peppercorns.
  4. Furthermore, add the the cinnamon. You can also add 1/4 tsp of fennel seeds or at this stage if you wish to.
  5. Dry roast on a medium flame for 1 minute. You will get a beautiful aroma when all the spices are roasted to perfection. Make sure you do not burn the spices. Burnt spices will give an awful flavor to the Chai ka Masala.
  6. Transfer the roasted spices immediately to a plate and keep aside to cool completely. You have to be very quick. Keeping the roasted spices on the pan for long will burn them.
  7. After all the spices have cooled down, transfer those to a small mixer jar.
  8. Blend it to a smooth powder. You can skip this step and blend after the addition of all the ingredients. We have blended this Chai ka masala twice to get a really fine powder.
  9. Now, add the dried ginger powder.
  10. Similarly, add the nutmeg powder. You can also add a few strands of saffron or dried rose petals for better color and flavour.
  11. Blend it to a smooth and fine powder.
  12. Store the Chai ka Masala in an air-tight container and use as required.  To make Masala chai using Chai ka Masala, add about 1/4 tsp of this masala( for 1 cup ) to the milk before you boil it. You can store this masala for about 4 months.

I want to know the quantity of the mixture, the quantity of crushed tea leaves to make 1 cup of chai. Can i mix the massala with the crushed tea leaves ? Thx

   Hi Kavita, We do not have an idea. Try using small quantity first and then add it if you feel it is less flavorful.

I’d love to try this recipe, but I only have already powdered cardamoms. Could you please guess how much might that 1/4 cup cardamoms be after grinding? 1-2 teaspoons? Thank you

Hi, Wonderful recipe. I was always wondering what was missing in my recipe- black pepper !! One suggestion : I find that if you include just a strand of kesar in the above recipe, it increases the flavour of the chai.
