Cheese and veggies are probably the two things that first come to mind when one thinks of pizzas! Here, cheese and veggies are once again the heroes of the show, but with an exciting twist. In this Cheesy Vegetable Pizza, a thin pizza is coated with a creamy cheese sauce, topped with sautéed veggies and finally drizzled with pizza sauce before being baked. You will simply fall in love with this pizza!

Ingredients


For The Cheese Sauce
1/2 cup grated processed cheese
2 tbsp butter
1 tbsp plain flour (maida)
1/4 cup milk
salt and to taste

For The Vegetable Topping
1/2 cup sliced and blanched baby corn
1/2 cup blanched carrot cubes
1/2 cup blanched zucchini cubes
1/2 cup sliced red capsicum
1 tbsp butter
salt and to taste

Other Ingredients
2 thin crust pizza base [175 mm. (7")
1/2 cup grated mozzarella cheese
1/2 cup pizza sauce

Method
For the cheese sauce

  1. Heat the butter in a broad non-stick pan, add the plain flour and cook on a medium flame for 30 seconds, while stirring continuously.
  2. Add the milk, ½ cup of water, cheese, salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  3. Divide the cheese sauce into 2 equal portions and keep aside.

  1. Heat the butter in a broad non-stick pan, add all the vegetables and sauté on a medium flame for 2 to 3 minutes.
  2. Add the salt and pepper and mix well.
  3. Divide the vegetable topping into 2 equal portions and keep aside.

How to proceed

  1. Place a pizza base on a clean, dry surface and spread a portion of the cheese sauce and arrange 1 portion of the vegetable topping evenly over it.
  2. Spread ¼ cup of pizza sauce evenly over it and finally sprinkle ¼ cup of cheese over it.
  3. Repeat steps 1 and 2 to make 1 more pizza.
  4. Place both the pizzas on a greased baking tray and bake in a pre-heated oven at 200°c (400°f) for 10 to 12 minutes or till the base is evenly browned and the cheese melts.
  5. Cut into equal wedges and serve immediately.

hello mam... I always refer to all your recipes mostly. n thanks for it... but in Pizza wat can we use instead of cheese... bcoz we are Jain we don''t have cheese..

   Hi Kanchan, You can try using paneer instead of cheese if you are Jain.

Hello mam, the recipes is awesome, but my problem is i m having a microwave oven and not an otg and it cannot be preheated. So is there any other alternative??

   Hi Sonali, Make them on a non stick pan on a very slow flame and sue ghee for cooking.

I have a question. In the recipe it says that you have to preheat the oven. For how long and what temperature do we need to preheat the oven?

Worth The effort!!! If you have some time in hand and are willing to eat an homemade pizza then this one is really good. Just need to eat it hot as once its cold the base gets a bit elastic as its made from maida. Very tasty...
