  1. Heat the oil in a broad / deep not-stick pan. Let it heat till the oil starts smoking. This healthy achar makes use of only 2 tsp of oil.
  2. Remove from the flame and keep aside to cool.  
  3. Add 1 cup finely chopped hara lehsun.
  4. Add the red chilli powder.
  5. Add the coriander cumin seed powder.  
  6. Add the turmeric powder (haldi) and asafoetida (hing).   
  7. Add the 1/4 tsp of salt.  
  8. Mix all the ingredients together using a spoon and keep aside to marinate for atleast 2 to 3 hours.
  9. Place the achar in 2 small bowls. Serve achar with bhakri, roti or paratha to make a healthy combintion of Indian achar and roti.

Hello, How two questions please, 1 - How long can I keep this for and how to store it? 2 - Can I use regular garlic or even green onions instead?

   Hi, 1. You can store this pickle in an air-tight container and put in fridge, it will lasts for 3 to 4 days.. 2. Please do not use regular garlic and spring onions, use fresh garlic which is in full season right now...

this pickle is a boon for those who suffer from high bp and crave for pickles. my father in law being the one, he loves pickles but is restricted to eat. when i made this green garlic pickle for him he was so happy that he actually gifted me a tarla dalal cookbook :-)
