How to make green garlic chutney :

  1. To make Green Garlic Chutney, first roughly chop and measure around 1¼ cup of chopped coriander and keep aside.
  2. Also, in a broad non-stick pan, take 1 ½ tbsp. of daria.
  3. Roast them on a medium flame for 2 minutes or till they are light brown in colour. Keep aside.
  4. In a small mixer jar, add the coriander.
  5. Add the sour curds. We have used homemade sour curd. We basically followed steps of this fresh curd recipe with an addition of extra curd and kept outside at a warm place for 7-8 hours.
  6. Add the roasted chana dal.
  7. Add 2 roughly chopped green chillies. You can add more or less as per your preference.
  8. Add the chopped ginger to the ingredients of Green Garlic Chutney.
  9. Add the chopped garlic.
  10. Add the chopped spinach to the ingredients Green Garlic Chutney.
  11. Add salt to taste.
  12. Add around 2 tbsp of water in a mixer. If you want a more watery Green Garlic Chutney, then add more water.
  13. Blend till smooth and your green garlic chutney is ready. You can even use a grinding stone for grinding the garlic chutney.
