  1. To make gulgule, combine the pumpkin and jaggery in a deep bowl and mix very well using your hands.
  2. Add all the remaining ingredients and mix very well with your hands.
  3. Drop spoonfuls of the mixture into hot oil in a deep non-stick pan and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
  4. Serve the gulgule immediately.

  2. Add 1/2 cup finely chopped jaggery (gur).
  3. Mix very well using your hands.
  4. Add 1/2 cup whole wheat flour (gehun ka atta).
  5. Add 1/2 cup freshly grated coconut.
  6. Add 2 tsp poppy seeds (khus-khus).
  7. Add 1/4 tsp cardamom (elaichi) powder.
  8. Add a pinch of baking soda.
  9. Mix very well with your hands.
  10. Drop spoonfuls of the mixture into hot oil in a deep non-stick pan.
  11. Deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides.
     
  12. Drain on an absorbent paper.
