Ingredients


For The Puran Poli Filling
3/4 cup chana dal (split bengal gram)
1 cup chopped jaggery (gur)
1/2 tsp cardamom (elaichi) powder
a pinch nutmeg (jaiphal) powder

For The Dough
1 1/4 cups of whole wheat flour (gehun ka atta)
1/2 tbsp ghee

Other Ingredients For Puranpoli
whole wheat flour (gehun ka atta) for rolling
ghee for smearing

For Serving With Puranpoli
ghee

Method
For the puran poli dough

  1. Combine the flour and ghee in a bowl and knead into a soft dough using enough water.
  2. Divide the dough into 5 equal portions and keep aside.

  1. Soak the chana dal for 30 minutes, drain and set aside.
  2. Combine the dal with enough water in a deep pan, and cook for 20 minutes. Drain the dal and set aside.
  3. Add the dal, jaggery, nutmeg and cardamom in a deep pan, mix well and cook on a medium flame for 5 to 8 minutes or till the jaggery melts, while stirring continuously and mashing at regular intervals.
  4. Cool completely and divide it into 5 equal portions. Keep aside.

  1. To make puran poli, roll out one portion of the dough into a 100 mm. (4") diameter circle using a little whole wheat flour for rolling.
  2. Place a portion of the filling in the center and fold the edges of the dough over the filling. Pinch the edges together to seal the filling.
  3. Flatten the dough and roll again into a 200 mm (8”) diameter circle, using a little whole wheat flour for rolling.
  4. Cook on a tava (griddle) over a medium flame, till it turns golden brown in colour from both the sides. Apply 1 tsp ghee while cooking.
  5. Repeat with the remaining dough and filling to make 4 more puran polis.
  6. Smear a little ghee on each puran poli and serve hot.

  1. To make the Maharashtrian style puran poli mixture take 1 cup chana dal in a deep bowl. Check for stone and grits before use. 
  2. Add enough water to soak the chana dal. 
  3. Cover with a lid and soak the chana dal for approx. 30 minutes. This step ensures faster cooking of the dal.
  4. Drain the soaked dal. 
  5. Transfer the soaked dal into a deep pan or kadai with enough water. 
  6. Cook the dal on a medium flame for approx. 20 minutes. Some people also prefer to cook the dal in a pressure cooker for upto 4 whistles. 
  7. Drain the dal. Make sure the dal does not turn mushy at this stage. 
  8. Transfer the cooked dal into a deep pan or non stick kadai. 
  9. Add jaggery. Jaggery will add sweetness to the puran poli. Some Maharashtrians also make the Puran poli with grain sugar.
  10. Add nutmeg powder. Nutmeg has a sweet aroma and a distinct taste. Nutmeg also has lot of medicinal properties and is used in Ayurveda to cure ailments.
  11. Add cardamom powder. Cardamom has a unique taste, with an intense aroma. It is widely used in Indian cooking especially to provide Mithais with a sweet aroma.
  12. Mix well and cook on a medium flame for 5 to 7 minutes or until the jaggery melts. 
  13. Mash the mixture well with the help of a masher. The puran poli mixture should not have any grains of dal and should be dry enough. All the dal needs to be mashed well and combined with the jaggery.
  14. Trasfer the mixture on to a plate and cool completely. 
  15. Divide the puran poli mixture into 5 equal portions and set aside.

  1. Take the whole wheat flour into a deep bowl.
  2. Add ghee, ghee makes the dough soft in texture.
  3. Knead into a soft dough with enough water. 
  4. Cover and keep aside. Allow it to rest for 30 minutes. 
  5. Divide the dough into 5 equal portions, cover and keep aside.

  1. Dust enough flour on the rolling board and place the dough ball.
  2. Roll out the dough into 4” circle and place one portion of the puran poli mixture in the center.
  3. Fold over the ends and gently press to seal the sides. Make sure you do not apply much pressure or the filling will ooze out. 
  4. Roll out the Maharastrian puran poli into an 8” circle using little whole wheat flour. Do not apply excess pressure while rolling or the filling will start oozing out. 
  5. Repeat steps 1 to 7 to roll out more 4 Maharashtrian style puran poli
  6. To cook the Maharshtrian style puran poli heat a non stick tava and gently place the rolled out puran poli. Cook it on one side until brown spots appear.
  7. Apply 1 tsp ghee on each side while cooking. 
  8. Turn over and cook until the Puran poli is golden brown and cooked.
  9. Serve the Maharahtrian style puran poli hot with ghee and Katachi amti or Potato bhaji.

In Andhra Pradesh,this recipe is called Bobbattu and is made during Makara Sankranti/Pongal festival. Dough is made of Maida.Stuffing will be more so that after frying with ghee, the stuffing is covered with thin layer of dough.The stuffing is also visible from the layer of dough. Total thickness of Bobbattu will be 3-4 mm and tastes very good. Sugar can also be used instead of Jaggery. Moderate Sweetness will be maintained so that children will also like it

I being Gujarati, I have always made puranpoli using toovar Dal. Tried this recipe using chana dal and everyone at my place really loved it. The jaggery proportion in this recipe is up to the mark and the puranpoli is not that sweet. It is a must try recipe.
